Easy Spinach Artichoke Pasta Bake

This easy spinach artichoke pasta is quick, full of flavor, and a hit with the whole family!

This dinner couldn’t be easier. Using store bought dip does all the heavy lifting, then you’re left with a flavor packed pasta dish the whole family will be obsessed with. I definitely plan to try a similar dish with other dips to see how it turns out cause it was easy and SO good!

Serves: 4 | Prep time: 5 min | Cook time: 20 mins (pasta cooking time + baking time)

Ingredients

  • 8 ounces dry pasta
  • 1 to 1½ cups cooked chicken, shredded or diced
  • 1 container spinach artichoke dip (about 10 to 12 oz)
  • 1/2 cup milk or pasta water (I used pasta water)
  • 1/4 to 1/2 cup grated parmesan cheese
  • 1/2 cup – 1 cup shredded mozzarella cheese
  • Optional: spinach
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F. Cook pasta according to the instructions.
  2. Directly in a baking dish, combine: cooked pasta, chicken, spinach artichoke dip, milk or pasta water (add a little at a time until desired consistency is achieved).
  3. Stir until everything is evenly coated and loosened into a creamy mixture. Fold in half of the cheese (both mozz + parm).
  4. If using spinach, mix it in now.
  5. Top with remaining mozzarella and parmesan.
  6. Bake for 10 to 12 minutes until heated through.
  7. Broil for 2 to 3 minutes until the cheese is melted and slightly golden.
  8. Let sit for a few minutes, then serve.

This was the baking dish I used, but any large baking dish (this one is 9×13) will work!
