Need a fast weeknight meal? Definitely add this delicious pizza baked tortellini to the menu!

easy family weeknight dinner

I’ve tried to do the whole no-boil pasta bake thing and it rarely works out for me. However, I’ve found what does work is using refrigerated pasta! This dish takes 5 mins to prep, then you have a pizza inspired pasta dish even picky toddlers will like!

Serves: 4-6 | Prep time: 5 min | Cook time: 25-30 mins

Ingredients

  • 20 ounces refrigerated cheese tortellini
  • 1½ cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup mini pepperoni
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • 2 tablespoons grated parmesan cheese
  • Optional toppings: diced bell peppers, cooked sausage, olives, or mushrooms

Instructions

  1. Preheat the oven to 375°F.
  2. Add the tortellini to a baking dish. Pour in the marinara sauce, 1/2 cup water, Italian seasoning, and garlic powder, then stir to coat the tortellini evenly.
  3. Cover the dish tightly with a lid or foil and bake for 20 minutes, until the tortellini are hot and the sauce is bubbling.
  4. Remove the foil and sprinkle the mozzarella, parmesan, and mini pepperoni over the top. Bake for another 5 to 10 minutes, until the cheese is melted and bubbly. Feel free to broil for a crispy top!
  5. Let rest for about 5 minutes before serving.

This is my beautiful baking dish that cooks and washes like a dream! Of course, any 9×13 or so baking dish will work just fine here as well.

Enjoy! And find more of my recipes here.
