This crockpot salsa chicken could NOT be easier. It’s a staple we have been making for years!

Calling this a recipe is way too generous, but here we are. Truly the simplest recipe to make that is SO versatile. You throw everything in the crockpot and let it cook. That’s it! Then you have this delicious, flavorful chicken that works for so many dishes.

Make burrito bowls, tacos, taco salad, quesadillas, enchiladas, protein packed scrambled eggs, and so much more. We love it!

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months. Please be mindful of sodium contents when serving to babies under 1.

STORAGE

I stored this in the fridge for 4 days, then transfer to the freezer. It can stay in the freezer for 2-3 months. The perfect recipe to meal prep and freeze!

TOOLS USED/RECOMMENDED

Crockpot – I recently got this super basic crockpot and so far I love it. Super affordable and easy to use!

Meat thermometer – I will never cook meat without using one! We have a expensive one because my husband cooks meat all the time, but this one is affordable and looks great. I like that it has printed on their the safe temperatures for meat so you never need to look it up!

Salsa Chicken

A super simple crockpot recipe that can be used for so many things!

Prep Time:5 minutes mins
Cook Time:4 hours hrs
Servings: 12

Ingredients

  • 3-4 chicken breasts
  • 1 packet low sodium taco seasoning
  • 1 16 oz jar of salsa

Instructions

  • Add your chicken to your crockpot
  • Sprinkle entire packet of taco seasoning on top of the chicken, then add entire jar of salsa
  • Mix around so each chicken breast is covered
  • Cook on high for 3-4 hours, or low for 6-8 hours, until chicken is fully cooked
  • Remove chicken breasts and shred, then add back into the salsa mixture and mix well
  • Serve and enjoy!
