These blueberry pancake bars are an easy breakfast or snack made with pancake mix to keep them nice and fluffy. Just mix everything together, bake, and slice! They’re perfect for toddlers and whenever you need to make mornings a little easier.

easy make ahead toddler breakfast

Making pancakes in one baking dish means there’s no need to stand at the stove flipping individual pancakes!! I use this 8×8 inch baking dish for mine. Cut the bars into smaller portions for little ones, and use either fresh or frozen blueberries.

Prep Time:5 minutes mins
Cook Time:28 minutes mins
Servings: 12

Ingredients

  • 2 cups Krusteaz Buttermilk Pancake Mix
  • 1 large egg
  • 3/4 cup milk
  • 1/2 cup plain whole milk Greek yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup blueberries fresh or frozen

Instructions

  • Preheat oven to 350°F. Grease an 8×8 inch baking dish or line with parchment paper.
  • In a medium mixing bowl, combine the pancake mix, egg, milk, Greek yogurt, maple syrup, and vanilla. Stir until just combined, being careful not to overmix.
  • Gently fold in the blueberries.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake for 26 to 30 minutes, checking around 26 minutes, until the top is lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Allow to cool for 10 to 15 minutes before slicing into 12 bars.

For the best texture, enjoy these within two days or freeze individual bars to reheat later. Let them cool completely before storing, then keep them in an airtight container in the refrigerator. Frozen bars can be stored for up to three months.
