Egg Free Quinoa Mini Muffins

I knew I had to make egg free quinoa mini muffins once I made the original. Simple, nutritious, and baby approved!

This is a great egg free muffin base to use for your little one! Feel free to mix things up with toppings and add ins, but don’t add too much since they’re mini. I added a cup of chopped strawberries and it was toooo much they were too wet.

Anyways, these muffins are higher protein and fiber due to the quinoa, sugar free, and delicious! They are the exact same recipe as my original quinoa mini muffins, just substituting the egg for an egg replacer. That’s it!

I used Kroger brand egg replacer. If you can’t find that, you can use this one available online at Target.

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the muffins. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

For information on how to safely serve foods to babies depending on their age (plus so much more), I recommend Solid Starts. The app is free and has tons of information!

ALLERGENS

This recipe flour and milk. You could easily replace the milk with whatever milk you choose! Gf flour should work fine here.

No eggs! I used Kroger brand egg replacer. If you can’t find that, you can use this one available online at Target.

STORAGE

I am storing these on the counter in an air-tight container for 4 days, then will freeze. To reheat from frozen I will either microwave for a minute or put in the toaster oven for 5 minutes until warm. You also could thaw overnight then warm for less time.

SUBSTITUTES & ADD INS

Mashed banana should sub in great for the applesauce, or a mixture of banana and applesauce. I plan to try out adding a few things in and seeing how it goes, will report back!

TOOLS USED/RECOMMENDED

Mini muffin tin – this is the one we have. I love it because you don’t need to use liners with it and it washes really easily!

Egg Free Quinoa Mini Muffins

A nutritious muffin base perfect for the egg allergen babies out there!2

Prep Time:5 minutes mins
Cook Time:15 minutes mins
Servings: 24

Ingredients

  • 1 cup cooked and cooled quinoa
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt optional
  • 1 cup unsweetened applesauce
  • 1/4 cup milk of choice
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 egg equivalent of egg replacement

Instructions

  • Preheat the oven to 350 and grease a mini muffin tin
  • Get a large bowl and add all of your ingredients
  • Mix until everything is combined
  • Add batter to muffin tin, each one should be a little less than full
  • Bake for 10-15 minutes, until a toothpick comes out clean
  • Cool in muffin tin for 5 minutes, then transfer to a wire rack to cool completely
  • Serve and enjoy!
