This veggie loaded and delicious zucchini pasta sauce will be your baby’s new favorite meal!

This comes together super quickly is a great way to serve zucchini to your little ones. It’s light and fresh, with a boost of protein from the ricotta, parmesan cheese, and hemp hearts. Plenty of fat for brain development, too! Easy to mix it up and add in your family’s favorite flavors too. Most important, it’s full of flavor!

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe.

ALLERGENS

This recipe contains dairy and whatever allergens might be in your pasta of choice.

A dairy free yogurt and parmesan will work here as a substitute.

STORAGE

I would store this in the fridge for 4 days max, then transfer to the freezer in a souper cube to be in ready to go portions for baby when needed.

To reheat I microwave until heated through.

SUBSTITUTES & ADD INS

Feel free to exclude the onion, and add in any seasonings you like! Any cheese should work here.

Zucchini Pasta Sauce

Light and fresh sauce that is jam packed with veggies and flavor!

Ingredients

  • 1 medium zucchini
  • 1 quarter yellow onion
  • 1 clove of garlic
  • 1 tbsp cooking oil of choice (I did avocado oil)
  • 2 tbsp hemp hearts
  • 1/3 cup full fat ricotta
  • 1/3 cup shredded parmesan
  • 1/4 cup pasta water
  • 4 servings pasta of choice 224 g

Instructions

  • Bring a pot of water to boil, add your pasta, and cook according to the packaging
  • Rough chop a zucchini, your quarter onion, and mince your garlic
  • Add oil and veggie to a skillet and cook until soft (10-15 minutes)
  • Add veggies to a blender or food processor, add in your hemp hearts, seasoning, ricotta, parmesan, and pasta water.
  • Blend until smooth
  • Drain your pasta and add to a bowl
  • Add in your blended sauce and mix until combined
  • Serve and enjoy!
