Need a lunch for your toddler you can throw together in 5 minute? This bean and cheese waffle is for you!

I am really falling in love with these waffle recipes. They’re just so quick and easy! Plug the iron in, then while it’s heating up make the batter. They cook up really fast and you have lunch on the table in 5 minutes! Such a win. Could work as a preschool/daycare lunch too?
Serves: 2 | Total time: 5ish minutes
Ingredients
- 1/3 cup refried beans (or mashed black beans)
- 1 egg
- 1/3 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon flour or oat flour
- Pinch cumin or taco seasoning
- Optional toppings/dips: guacamole, sour cream, salsa
Instructions
- Preheat a waffle iron and lightly grease it.
- In a bowl, mix the beans, egg, cheese, flour, and seasoning until combined.
- Spoon 1/2 the mixture into the waffle iron and spread slightly so it cooks evenly.
- Close and cook for 3–4 minutes, until set and lightly crispy. Once cooked, make your 2nd waffle.
- Let cool then serve!
This is the mini waffle iron we use! I love how quickly it heats up. You may have seen my ghost version in the video, unfortunately that one is only sold around Halloween. This waffle iron is the same brand and has removable holiday plates!
