Got a little chocoholic on your hands? Then add these black bean brownies to your “must-try” list asap!

These little chocolate treats could not be easier to make. SO fool-proof. You literally throw everything in the blender, blend until smooth, then bake. That’s it!! Then you’re left with fudgy and nutritious brownies your toddler will be obsessed with.
Serves: 12 (depends on what you consider a serving 😉 ) | Prep time: 5 min | Cook time: 20 min
Ingredients
- 1 (15 oz) can black beans, drained and rinsed
- 2 eggs
- 1/3 cup maple syrup or honey
- 1/4 cup oil or melted butter
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- handful cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F. Line or grease an 8 x 8 baking dish.
- Add the black beans, eggs, maple syrup, oil, cocoa powder, vanilla, baking powder, and salt to a blender or food processor.
- Blend until completely smooth. Scrape down the sides if needed so there are no bean pieces left.
- Pour the batter into the baking dish and spread evenly.
- Sprinkle the chocolate chips over the top, if using.
- Bake for 18 to 22 minutes, until the center is set.
- Let the brownies cool in the pan for at least 30 minutes before slicing so they firm up. They slice best once completely cooled! Store leftovers in the fridge.
