Broccoli Chickpea Fritters

These high fiber and iron packed broccoli chickpea fritters are a nutrient dense delicious snack, side, or meal for your baby!

Not the most photogenic of recipes, but these have been a hit with SO many babies. I keep getting comments and messages that mom’s weren’t expecting their little ones to love these, but they do! Jam packed with nutrients, they’re a good one to keep on hand for sure.

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the pancakes. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Half fritters would probably work well here. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS

This recipe contains egg.

I plan to test them with an actual egg replacement, and will update here when I do. If you’d like to try, here’s one that has good reviews and is available online. I believe that should work just fine!

STORAGE

I would store these in the fridge for 4 days max, then transfer to the freezer. Freeze in a single layer, I typically will place on a baking sheet with parchment paper, and once frozen transfer to another container or ziplock bag. If you freeze altogether it’s impossible to separate, this makes it easy.

Some parents have reported these turning hard once reheated from frozen. I would suggest either thawing overnight in the fridge before reheating (microwaving or toaster oven) or microwaving for a little to thaw them out then transferring to the toaster oven. You also could just reheat in the microwave!

SUBSTITUTES, ADD INS, & NOTES

Any bean should work here.

Feel free to season to your baby’s or family’s preferences.

Also, I mashed the chickpeas and broccoli together, but next time I would mash the chickpeas on their own so I could more easily see that each chickpea was mashed (as whole chickpeas can be a choking hazard for littles)

TOOLS USED/RECOMMENDED

Small spatula – I find these easiest to use when flipping small pancakes or other small fritters for baby

Mixing bowl

Skillet

Steamer/Pasta Pot – We use this all the time. Has a steamer and pasta insert. This isn’t the exact one we have, but probably should switch to it because it’s stainless steel.

Masher – I like this one because it doesn’t get stuck in the drawer!

Cookie scoop – I love using this to scoop meatballs, pancake batter, and tons more. I use this thing ALL the time when cooking for my son (and just in general)

Broccoli Chickpea Fritters

These little fritters are jam packed with iron, fiber, and flavor. Your baby will love them!

Ingredients

  • 1 can chickpeas 439g
  • 2 cups steamed broccoli
  • 1/2 cup cornstarch
  • 1 egg
  • 1.5 tbsp Italian seasoning
  • 1.5 tbsp poultry seasoning

Instructions

  • Steam your broccoli
  • Rinse chickpeas and add to a bowl
  • Mash these until all chickpeas are flattened
  • Add in broccoli and mash together with chickpeas
  • Add remaining ingredients and mix until combined
  • Use a cookie scoop to add mixture to your hot greased skillet and flatten with a fork
  • Cook until crispy on both sides
  • Serve and enjoy!
