Freezer Breakfast Sandwiches

Need a quick breakfast to prep for postpartum or just busy life, these freezer breakfast sandwiches are a great option!

I made it my goal to really focus on food prep before baby came and now that she’s here I am SO glad I did. These have saved us already on multiple occasions. Food you can eat with one hand is so essential with a baby, especially options you can quickly heat up in the microwave.

Freezer Breakfast Sandwiches

Easy breakfast meal prep to save you on busy mornings!

Ingredients

  • 12 potato rolls
  • 12 fully cooked breakfast sausage patties
  • 12 large eggs
  • ¼ cup milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • 12 slices American cheese

Instructions

  • Preheat oven to 350°F and grease a 9×13 baking dish.
  • Crack the 12 eggs directly into the baking dish. Add milk, salt, and pepper and whisk everything together right in the dish.
  • Bake for 15–18 minutes, until the eggs are just set. Let cool for about 5 minutes, then cut into 12 pieces.
  • While the eggs are cooking, heat the precooked sausage patties according to the package directions. Let them cool slightly.
  • Slice the potato rolls and assemble each sandwich with: 1 egg piece, 1 sausage patty, 1 slice American cheese
  • Let everything cool completely before wrapping. This helps prevent condensation and soggy bread.
  • Wrap each sandwich individually and place them in a freezer-safe bag or container.

Reheating Options:

Microwave from frozen:

  1. Remove wrapping and wrap the frozen sandwich in a slightly damp paper towel.
  2. Microwave at 50% power for 2 minutes. Flip.
  3. Microwave at 50% power for another 1–1½ minutes.
  4. Let it sit for 1 minute before eating.

Air fry from frozen:

  1. Remove any plastic/freezer wrapping.
  2. Wrap the sandwich loosely in foil.
  3. Air fry at 300°F for 10 minutes. Flip it.
  4. Cook another 2–5 minutes, checking the center.
  5. For a slightly toasted roll, open/remove the foil for the last 1–2 minutes.
  6. Let sit for about 1 minute before eating.

Microwave from thawed:

  1. Place frozen sandwich in the fridge overnight to thaw.
  2. In the morning when ready to eat, wrap in a slightly damp paper towel.
  3. Microwave 45–60 seconds at 50% power. Flip.
  4. Microwave another 30–45 seconds at 50% power.
  5. Let sit 30 seconds.
  6. Add 10–15 seconds at full power only if the center needs it.
