I’m SO excited to share these carrot cake oatmeal bars that I know your baby will love! Toddlers will approve, too!

Carrot Cake Oatmeal Bars for Baby

YUM! These carrot cake oatmeal bars were a recent experiment turned right. I always get a little nervous with baking experiments, but these turned out really good. My husband likes them too, but he adds some maple syrup on top. When my son gets a little older I think I’ll bake some maple or brown sugar right in!

These are sugar free and come together all in one bowl. Bake them in a 8×8 baking pan with some parchment paper so they easily come out.

Baby led weaning

This would work for babies ages 6 months and up! Works well since they can easily hold the big pieces in their hand. For my son, since he’s older and using the pincer grasp, I crumbled into bite sized pieces.

Allergens

This recipe contains 1 egg. I have not tried using an egg replacement, but I believe a flax egg should work. It also contains oats, so if your baby needs to be gluten free, just use gf oats.

Storage

I plan to store these in the fridge for 4 days max, and then freeze for 2 months max.

Substitutes & Add Ins

Mashed banana would work well in place of applesauce. You could easily boost the nutrition (and tbh I meant to 🤦‍♀️ ) by adding in seeds like flax, hemp, or chia. You could stir in some nut butter too!

Carrot Cake Oatmeal Bars for Baby

Carrot Cake Oatmeal Bars

Baked oatmeal bars with carrot cake flavors that come together in one bowl!

Prep Time:10 minutes mins
Cook Time:30 minutes mins
Servings: 15 bars

Ingredients

  • 1 cup grated carrots 2-3 large carrots
  • 2.25 cups oats rolled or quick, not instant
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp clove
  • 1 cup unsweetened applesauce
  • 1 egg
  • 1 tsp vanilla

Instructions

  • Preheat the oven to 350
  • Get a 8×8 baking dish and line with parchment paper (crumple first to get it to lay easier)
  • Wash and peel your carrots, then grate onto cheesecloth. Squeeze out excess moisture (or pat dry with a paper towel/dish cloth). Add to a bowl
  • Add in your remaining ingredients and mix well
  • Add your mixture to your baking dish and press down using the back of a spatula until even
  • Bake for 30 minutes, or until edges brown slightly and top looks dry
  • Cool for 5-10 minutes, cut and serve!

    These are super easy to make. I thought it was a little too much cloves for my taste but my toddler didn’t seem to mind. I would probably do 1/4 tsp of cloves next time
