This cheeseburger stew is the ultimate easy weeknight meal for families. Quick to make, so flavorful, and makes a big batch so you have dinner figured out for the next few days!

Oh look, another poor quality photo. One of these days I’ll consistently remember to take pics of the meals! I am actually making these for my family during dinner time so usually I’m just thinking about getting it on the table 😂
Serves: 6-8 | Total time: 30-35 minutes
Ingredients
- 1 lb ground beef
- 3 tablespoons butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 4 cups beef broth (1 full 32 oz carton)
- 1½ lbs potatoes, peeled and diced (about 3–4 medium)
- ¾ cup heavy cream
- 2 cups shredded cheddar cheese
- 2 teaspoons Worcestershire sauce
- ¾ teaspoon salt, plus more to taste
- ¼ teaspoon black pepper
- ½ teaspoon paprika
Instructions
- In a large Dutch oven or pot over medium heat, brown the ground beef until fully cooked. Drain excess grease if needed.
- Add the butter to the pot with the beef. Once melted, add the diced onion and cook 4–5 minutes until soft.
- Stir in the garlic and cook 30 seconds until fragrant.
- Sprinkle the flour over the mixture and stir constantly for 1 minute.
- Slowly pour in the beef broth while stirring to prevent lumps.
- Add the diced potatoes, Worcestershire sauce, salt, pepper, and paprika.
- Bring to a gentle simmer, then reduce heat to low, cover, and cook 12–15 minutes until potatoes are fork-tender.
- Stir in the heavy cream.
- Reduce heat to low and gradually stir in the cheddar cheese until melted and smooth.
- Taste and adjust seasoning as needed. Serve warm.
Notes:
- If you want it thicker, simmer uncovered a few extra minutes or mash some potatoes against the side of the pot. You can also add less broth.
- This stew will thicken more as it cools.
