Delicata Squash, Apple Sausage, & Onion Pot Pie

If you want something rich, hearty, full of flavor and so so yummy, this delicata squash, apple sausage, & onion pot pie is the one for you!

Serves: 4-6 | Total time: 40–45 minutes

Ingredients

  • 1 delicata squash
  • 1 red onion
  • 4 apple chicken sausages
  • Olive oil
  • Salt and pepper
  • Pinch of dried sage or rosemary
  • 1/3 cup all-purpose flour
  • 1.5 cups chicken broth
  • 1/2 cup heavy cream + a little more for brushing pie crust
  • 1 teaspoon maple syrup
  • Black pepper to taste
  • 1 refrigerated pie crust

Instructions

  1. Preheat oven to 400°F.
  2. Slice the delicata squash in half lengthwise and scoop out the seeds. Cut into 1/2-inch slices, then cut each slice into 2 to 3 smaller bite-size arcs.
  3. Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil. Add the squash in a single layer, working in batches if needed. Cook for 3 to 4 minutes per side until lightly browned and just shy of fork-tender. Transfer to a bowl.
  4. In the same skillet, add the sliced apple chicken sausage and cook until browned. Add the sliced red onion and cook until softened and lightly caramelized. Return the squash to the skillet and season with salt, pepper, and a pinch of sage or rosemary.
  5. Push the mixture to the edges of the skillet, creating an open well in the center. Add olive oil if needed so there is about 2 to 3 tablespoons of fat in the pan. Sprinkle in the flour and stir constantly for 30 seconds.
  6. Slowly whisk in the chicken broth until smooth. Stir in the heavy cream and maple syrup. Season with black pepper and stir until everything is evenly coated and creamy.
  7. Remove the skillet from the heat. Lay the pie crust over the filling, tucking the edges slightly into the pan. Cut 4 to 5 small slits in the crust to vent. Brush with heavy cream.
  8. Bake for 20 to 25 minutes, until the crust is golden and the filling is bubbling. Let rest for 5 minutes before serving.
