Cheesy Potato Taco Skillet

Okay this cheesy potato taco skillet is definitely going in the regular rotation. SO filling, easy to make, and yum!

easy family weeknight dinner

This was a huge gestational diabetes win for me because it was SUCH a yummy dinner and my numbers were well within range. I will absolutely be making this again. I used Wegmans brand frozen potatoes, the country style ones, and couldn’t believe how delicious they were! Made this dish even easier since I did have to chop any potatoes, and they cooked up really well.

Serves: 4 | Prep time: 5 min | Cook time: 20-25 mins

Ingredients

  • 1 bag frozen diced potatoes (18-24 oz, whatever you can find will work!)
  • 1 pound ground beef or ground turkey (I used 90/10 beef)
  • 1 packet taco seasoning
  • 1.5 cups shredded cheese (cheddar or Mexican blend)
  • 1 bell pepper, diced small
  • 1 small onion diced small
  • 1 can of black beans, drained and rinsed
  • 1/2 cup sour cream (+ more for topping)
  • Toppings of choice: salsa, avocado, lettuce, crushed tortilla chips

Instructions

  1. Heat a large skillet over medium to medium high heat. Add the frozen potatoes in a single layer and cook, stirring occasionally, for 10 to 15 minutes until tender and lightly crispy. Remove potatoes from the pan and set aside.
  2. To the same pan, add the ground meat, peppers, and onions, and cook until meat is browned and veggies translucent, breaking up the meat as it cooks.
  3. Once cooked, stir in your drained and rinsed black beans.
  4. Stir in the taco seasoning and 1/4-1/2 cup water. Mix everything together and let it cook for 2 to 3 minutes until slightly thickened.
  5. Add back in your potatoes. Mix in sour cream and half of your shredded cheese until combined and melted.
  6. Sprinkle remaining cheese over the top, cover the skillet, and let it melt for 2 to 3 minutes.
  7. Serve with any toppings you like!

This is our skillet we used. Truly love this pan so much (and so many others in their line!)
