This chicken and stuffing crockpot meal is SO easy and so cozy! And toddler approved, of course.

Beyond easy meal that works for the whole family. Throw it in the crockpot, shred the chicken once it’s cooked, and there’s dinner! It’s so yummy and cozy, perfect for the colder months!

This recipe has dairy and wheat.
STORAGE
I stored the leftovers in the fridge, and we finished it in a few days. If we hadn’t, I would have kept it in the fridge for max 4 days, then transferred to the freezer. I reheated by microwaving!
TOOLS USED/RECOMMENDED
Meat thermometer – I will never cook meat without using one! We have a expensive one because my husband cooks meat all the time, but this one is affordable and looks great. I like that it has printed on their the safe temperatures for meat so you never need to look it up!
Slow Cooker – this is our super basic slow cooker we have that I am LOVING! Simple and affordable.

Chicken and Stuffing
Ingredients
- 4 boneless skinless chicken breasts (or thighs)
- 1 can 10.5 oz cream of chicken soup (or cream of mushroom soup)
- 1 cup chicken broth
- 1 package 6 oz stuffing mix
- 1/2 cup celery diced (optional)
- 1/2 cup onion diced (optional)
- Salt and pepper to taste
- Garlic powder, onion powder, dried rosemary, dried thyme to taste (optional)
Instructions
- Season the chicken breasts or thighs with salt, pepper, and all additional seasonings if using, and place them in the bottom of the crockpot.
- Add cream of chicken soup and chicken broth to crockpot and mix.
- If using, sprinkle the diced celery and onion over the top of the chicken.
- Sprinkle the stuffing mix over the chicken and broth mixture. Do not stir; just let it sit on top.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once done, remove the chicken and shred or chop, then add back in and mix everything together. Serve warm and enjoy!

There is no mention of when to add the rosemary, thyme, garlic and onion powders. I assume it was supposed to be at the beginning with the salt and pepper to season the chicken? By the time I realized it wasn’t in the steps. I had already added the onion and celery on top. It should be included in the steps somewhere.
