Cottage Cheese Pancakes

These pancakes are a great breakfast for littles since they have an extra boost of protein from the cottage cheese (and no, you can’t taste it!)

I know, I know. Cottage cheese is everywhere right now, but for good reason! It truly is super versatile and an easy source of protein. For this recipe I blended it first so there would be no curds in the batter. You can either stick the whole tub in the blender or use an immersion blender and blend it right in the container. My son ate these pancakes up so quick! But he seems to do that with just about any pancake (and that’s why I make so many variations 😂 )

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

Something to be mindful of with cottage cheese is it’s sodium content. If you can get lower sodium that’s great, but it’s okay if you can’t. I personally served regular cottage cheese when he was under 1, but please speak to your doctor about your baby and sodium if you have concerns.

ALLERGENS

This recipe has eggs and dairy.

If you’d like to try it with an egg replacer, this one available online at Target. This post highlights other ideas for egg substitutes in recipes.

STORAGE

I didn’t have leftovers but if I did I would have stored these in the fridge for 4 days, then transferred to the freezer. They can stay in the freezer for 2-3 months.

To freeze I would line a baking sheet with foil or parchment then lay in a single layer and place in the freezer. Once frozen (give it a few hours) you can transfer to another container. This way they are individually frozen rather than all stuck together in one huge block!

To reheat I would either thaw in the fridge overnight then toast or microwave, or just toast or microwave from frozen. Best served warm, but my son liked them cold too!

SUBSTITUTES & ADD INS

I haven’t tried yet with any subs or add ins, but let me know if you do! Cinnamon could work well here. You also could sub in banana for the applesauce (about 1/2 of a banana). Adding in blueberries or chocolate chips to the batter would be yummy!

TOOLS USED/RECOMMENDED

Small spatula – I find these easiest to use when flipping small pancakes or other small fritters for baby

Cookie scoop – I love using this to scoop meatballs, pancake batter, and tons more. I use this thing ALL the time when cooking for my son (and just in general)

Cottage Cheese Pancakes

Quick pancakes with a bit of extra protein!

Ingredients

  • 1/2 cup cottage cheese blended
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • A pinch of salt

Instructions

  • Blend your cottage cheese if not already blended
  • In a mixing bowl, combine the cottage cheese, unsweetened applesauce, and egg. Mix well until smooth.
  • Add the flour, baking powder, vanilla extract, and a pinch of salt to the mixture. Stir until just combined.
  • Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with butter or oil.
  • Pour small amounts of batter (about 2-3 tablespoons per pancake) onto the skillet.
  • Cook until bubbles form on the surface of the pancakes and the edges look set, about 3-5 minutes. Flip and cook for an additional 1-2 minutes until golden brown and cooked through. If the pancakes are still gooey in the middle, try cooking them at a slightly lower temperature for a bit longer to ensure they cook through without burning.
  • Remove from the heat and cool slightly.
  • Serve and enjoy!
