This one pot taco pasta was a huge hit with my toddler, and mom and dad too!
Any dish that’s a hit for all 3 of us is a major win in my book. My son even liked the leftovers – which he tends to be picky about. It’s simple to make, the pasta cooks right in the pot with everything else, and cleanup is a breeze since it’s all cooked in one dish. Hope you love it!
ALLERGENS
This recipe has dairy, feel free to omit or add in a DF cheddar instead.
STORAGE
I stored the leftovers for a few days, and then we finished it! If we hadn’t by day 4, I would have frozen.
TOOLS USED/RECOMMENDED
Braiser – this is the pot I used, but any large + shallow one will work just fine!
Meat Chopper – this is a great took to help break up ground meats!

One Pot Taco Pasta
Ingredients
- 1 lb about 450 g ground beef or turkey (or use a plant-based substitute)
- 1 small onion diced
- 1 packet taco seasoning or homemade
- 1 can diced tomatoes with juices
- 2 cups chicken or vegetable broth
- 8 oz dry pasta
- 1 can of corn drained
- 1 can of black beans rinsed and drained
- 2 cups shredded cheese like cheddar or Monterey Jack
Instructions
- In a large pot, cook the ground beef or turkey over medium heat until browned. Drain any excess fat if necessary.
- Add the diced onion to the pot and sauté until the onion is soft and translucent.
- Stir in the taco seasoning and the can of diced tomatoes with their juices. Mix well.
- Pour in the chicken or vegetable broth and add the pasta. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.
- Stir in the corn and black beans, cooking for an additional 2-3 minutes until heated through.
- Remove the pot from the heat and stir in the shredded cheese until melted and creamy.
- Serve warm, topped with optional garnishes like cilantro, jalapeños, avocado, or sour cream.

I struggle to cook family dinners for my husband, our 1 year old, and myself. I needed something quick and easy and this was an absolute hit- Every recipe we’ve tried from messybunmotherhood has been.
We used rigatoni pasta and it didn’t get “done” enough so next time I’ll use a thinner, smaller pasta.
