If you need a quick and easy breakfast for your toddler, add these peanut butter banana waffles to the weekly rotation!

5 minute recipes are my go-to. Easy to make, don’t require a ton of ingredients or thinking, and my toddler is (usually) a fan! But if he isn’t, at least I didn’t spend a ton of time making it ๐ These are only sweetened with the banana, so if your toddler prefers things a little sweeter feel free to top with syrup, or incorporate into the batter (maybe 1-2 tsp?). Peanut Butter Banana Waffles
Ingredients
- 1/2 ripe banana mashed
- 1 egg
- 1 tablespoon peanut butter
- 3 tablespoons oat flour
- 1/4 tsp pinch baking powder
Instructions
- Preheat waffle iron and lightly grease.
- Mash banana until smooth.
- Add egg and peanut butter. Mix until combined.
- Stir in oat flour and baking powder.
- Spoon half the batter into waffle iron and spread slightly.
- Cook 3โ4 minutes, until set and lightly golden. Repeat for 2nd waffle (remaining batter).
- Let cool slightly before cutting.
If you don’t have oat flour, you can just blend oats! You can sub in AP flour, but I’d start with 2 tbsp and see how the batter looks.
If you make a big batch, store in the fridge for 3-4 days, then transfer to freezer!
