Shredded Apple Pancakes

These shredded apple pancakes are a great way to serve apple in a safe way for baby, without getting shredded apple all over the place!

This is a quick recipe that your baby will love. Apple can be a choking hazard for little ones, so the safest way to prepare for 6 months old is either boiling half of an apple until soft, then letting cool and serving, or shredding. I found myself not really wanting to go through the peeling, boiling, cooling process, plus my son seemed so-so on it, so we went with shredded. He LOVED it, unfortunately so much ended up in his bib, in the high chair, or on the floor. Decided to try them as a pancake and it was a huge hit. Recipe takes only a few minutes to make and they’re naturally sweet!

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the pancakes. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS

This recipe contains flour and egg. GF flour should work here. I have not yet tried egg free, but I plan to try with an egg replacement, here’s one that has good reviews and is available online, if you’d like to give it a go! Once I try I will update here.

STORAGE

I stored these in the fridge for 4 days max, then transferred to the freezer. To reheat I put in the toaster oven until warm, but you could also do the microwave.

SUBSTITUTES & ADD INS

I believe shredded in some carrot or zucchini (with excess moisture squeezed out) would work well here too.

If your batter seems too wet, add in more flour.

TOOLS USED/RECOMMENDED

Box grater – I grated the apple on the biggest grater side

Small spatula – I find these easiest to use when flipping small pancakes

Cheese cloth to squeeze out excess moisture (but your hands work well too!)

Shredded Apple Pancakes

A great way to serve apples in a safe way for baby that isn't quite as messy as serving just shredded apple by itself!

Servings: 6 babies

Ingredients

  • 2 medium apples shredded and drained of excess liquid
  • 1 egg
  • 1/4 cup flour
  • 1/4 cup milk of choice

Instructions

  • Shred your apples using a box grater and squeeze out as much excess moisture as you can
  • Add in remaining ingredients and give a good mix until combined
  • Add a tablespoon of batter to a greased skilled (I use avocado oil and cook on medium-low head)
  • Cook on both sides
  • Serve and enjoy! For younger babies you can cut in half to serve, once they have pincer grasp you can cut into smaller pieces
