For all the berry obsessed littles, these strawberry pancake bites are the perfect easy breakfast!

How fun are these little pancake bites?! My son absolutely loved them! Fun way to change up breakfast, or strawberries, if your kid is obsessed like mine is 😂 I used Kodiak pancake mix cause it’s our fave!! I love that it has protein and fiber, and my son happily eats it every time.

This recipe contains only the allergens in the pancake mix you choose.
STORAGE
These are definitely best served fresh. However, I stored these in the fridge for 3 days. I haven’t tried freezing.
To reheat I put in our toaster oven. They can get a little mushy as the days go on from the moisture in the strawberries – that’s why it’s super important to dry on paper towels after you cut them!!
TOOLS USED/RECOMMENDED
Small spatula – I find these easiest to use when flipping small pancakes or other small fritters for baby

Strawberry Pancake Bites
Ingredients
- 6-8 medium-large strawberries sliced into rounds
- 1/2 cup pancake mix store-bought or homemade + additional ingredients needed to mix batter
- Butter or oil for greasing the pan
Instructions
- In a bowl, mix the pancake mix according to the packaging. Stir until smooth. The batter should be thick but still easy to dip.
- Slice the strawberries into rounds, about 1/4-inch thick. Lay on a paper towel to absorb excess moisture.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
- Dip each strawberry round into the pancake batter, coating it on both sides.
- Place the dipped strawberries onto the heated skillet. Cook for about 2-3 minutes on each side, until golden brown and cooked through.
- Let the pancake bites cool slightly before serving. Enjoy!
