This sweet potato apple bread was a huge hit with the whole family (and we called it cake to my toddler which only made him love it more 😉 )

This is a quick recipe that makes a really delicious snack cake, bread, or loaf. Whatever you want to call it. Doesn’t matter, it’s yummy no matter what the name is! The only added sweetness is 1/4 cup of honey for the entire loaf! Plus the sweet potatoes and apples add nutrition and sweetness as well.
BABY LED WEANING
This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

PLEASE NOTE – this recipe contains honey, which babies under 1 cannot have. Either omit, or sub in another sweetener.
ALLERGENS
This recipe has eggs, flour, and milk. The milk can be a df version.

STORAGE
I stored these on the counter for 4 days. We didn’t have leftovers, but I would have transferred to the freezer at that point. I would cut into slices before freezing!
TOOLS USED/RECOMMENDED
Parchment paper – I buy precut online because I find dealing with a roll of parchment to be the most annoying thing and it’s just so much easier to have it cut for you! Comes in a variety of sizes. Pro tip – crumple up before lining your pan and it will stay in there much better.
Masher – I like this one because it doesn’t get stuck in the drawer!
Loaf Pan – this is the pan I use for all my loafs/breads!

Sweet Potato Apple Bread
Ingredients
- 1 cup mashed sweet potato about 1 medium sweet potato
- 1 medium apple grated with liquid squeezed out
- 2 eggs
- 1/4 cup honey
- 1/4 cup oil or melted butter I used olive
- 1/4 cup milk of choice
- 1 teaspoon vanilla extract
- 1 1/2 cups AP flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- Cook the sweet potato by roasting it, boiling it, or microwaving it until soft. Once cooked, mash it until smooth and measure 1 cup.
- In a large bowl, mix the mashed sweet potato, grated apple, eggs, honey, oil or butter, milk, and vanilla extract. Stir until well combined.
- To your bowl, add the flour, baking powder, baking soda, cinnamon, and salt. Mix until just combined.
- Bake: Pour the batter into the prepared load pan and spread it out evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve!
