Chocolate Zucchini Breakfast Cookies

Chocolatey breakfast cookies with hidden veggies that toddlers will love!

Ingredients

  • 1 cup rolled oats
  • ¼ cup almond flour
  • 2 tbsp unsweetened cocoa powder
  • ½ tsp baking powder
  • pinch of salt
  • ½ cup unsweetened applesauce
  • ¼ cup peanut butter or almond butter
  • 1 egg
  • 2 tbsp honey
  • ½ tsp vanilla extract
  • ½ cup finely shredded zucchini squeezed very well to remove moisture
  • 2-3 tbsp chocolate chips

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Finely shred zucchini and squeeze thoroughly in a paper towel or dish towel to remove excess moisture.
  • In a bowl, mix well: oats, almond flour, cocoa powder, baking powder, and salt.
  • Then add: applesauce, nut butter, egg, honey, and vanilla. Mix until just combined
  • Fold in zucchini and chocolate chips.
  • Scoop about 2 tbsp of dough per cookie onto the baking sheet and gently flatten slightly.
  • Bake for 12–14 minutes, until set.
  • Allow cookies to cool so they firm up.
