These almond date energy bites are the perfect no cook toddler snack!

Need a quick no sugar added no cook/bake toddler snack? This is for you! Especially if your little one loves nut butter.
BABY LED WEANING
If you are serving this to babies under 1 years old, I would be mindful of how you prep these energy bites. Usually bigger is better, so perhaps bigger bites would be safest. Please do your own research to ensure you’re serving them safely!

This recipe has almonds + nut butter (can be any nut butter!)
STORAGE
I stored these in the fridge for a week, I did not try freezing.
TOOLS USED/RECOMMENDED
Parchment paper – I buy precut online because I find dealing with a roll of parchment to be the most annoying thing and it’s just so much easier to have it cut for you! Comes in a variety of sizes.
Mini Food Chopper – What I used to process the batter!
Cookie scoop – I love using this to scoop meatballs, pancake batter, and tons more. I use this thing ALL the time when cooking for my son (and just in general)

Almond Date Energy Bites
Ingredients
- 1 cup almond flour
- 6 dates softened with hot tap water
- 1/2 cup unsweetened nut butter of choice I used sunflower
- 1/2 tsp vanilla
- Pinch of salt optional, not needed if nut butter contains salt
Instructions
- If your dates are not soft, soak them in warm tap water for about 10 minutes to soften, then drain.
- In a food processor, combine the softened dates, almond flour, nut butter, vanilla extract, and salt. Blend until the mixture is smooth and well combined.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
- Refrigerate the energy bites for at least 30 minutes to firm up.
- Once chilled, they’re ready to eat! Store any leftovers in an airtight container in the refrigerator for up to a week.
