If you need a hidden veggie recipe your toddler will actually eat, definitely give these apple carrot mini muffins a try!

These were an instant hit, with my toddler and my husband!! Maybe me too if it wasn’t for gestational diabetes making me too scared to try most of my recipe lol. But they did smell amazing. Grated carrot means added moisture plus, of course, added veggies. And they blend so well with the apple flavor! Definitely a great one to try for wake up snacks, easy breakfasts, or just anytime you need a little something!

Apple Carrot Mini Muffins
Ingredients
- 1/3 cup full fat Greek yogurt
- 1/3 cup unsweetened applesauce
- 1 egg
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/3 cup finely grated carrot excess moisture squeezed out
- 3 tbsp honey
- 2 tbsp oil avocado oil or melted butter
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- Pinch salt
Instructions
- Preheat oven to 350°F and grease a mini muffin pan.
- In a bowl, mix together the yogurt, applesauce, egg, honey, oil, and vanilla until smooth.
- Add in the flour, grated carrot, cinnamon, baking powder, baking soda, and salt. Gently stir until just combined. Do not overmix.
- Scoop into mini muffin pan, filling each about 3/4 full.
- Bake for 14–17 minutes, or until set and lightly springy in the center.
- Let cool slightly before serving.
