These baked loaded quesadillas were delish and a hit with the whole fam!

If you need a quick and easy dinner idea to add into your weekly rotation, pleaseeee give this one a try.
ALLERGENS
This recipe has dairy and wheat. Feel free to use GF tortillas, and a df cheese (but make sure it melts well cause that helps hold the quesadilla together)
STORAGE
These we ate in a day or two. I stored the leftovers in the fridge, and air-fried the next day to heat up. I haven’t tried freezing, but I think they would freeze fine!
TOOLS USED/RECOMMENDED
Parchment paper – I buy precut online because I find dealing with a roll of parchment to be the most annoying thing and it’s just so much easier to have it cut for you! Comes in a variety of sizes.
NOTES
I cooked the entire pound of ground turkey, and then added in the black beans and corn to that mixture. From there I scooped that into the tortillas. I didn’t do that in the video, but I found it much easier to do that way the next time I made it! You will have leftover filling, but imo, it’s delicious and can be eaten on it’s own or over a salad or something. Or just make more quesadillas! 8 smaller tortillas is what fits on the baking sheet, so you might need an additional one if you’re doing more than that.

Baked Loaded Quesadillas
Ingredients
- 8 small flour tortillas
- 1 cup shredded cheese cheddar, Monterey Jack, or a blend
- 1 lb ground meat beef or turkey
- 1 packet taco seasoning or homemade
- 1/2 black beans drained and rinsed
- 1/2 cup corn kernels fresh, canned, or frozen
- cooking spray or olive oil
- Optional toppings: salsa, sour cream, guacamole, chopped cilantro
Instructions
- Preheat your oven to 375°F (190°C). Add parchment paper to your baking sheet and spray with cooking sheet or brush with olive oil.
- Lay out 8 tortillas on a baking sheet. Sprinkle half of the cheese evenly over each tortilla.
- Cook the ground meat until cooked through and add the taco seasoning. Mix in the black beans and corn and thoroughly mix.
- Scoop the filling onto each tortilla, around 1/4 cup for each.
- Sprinkle the remaining cheese over the fillings.
- Fold over each tortilla and press slightly. Spray/brush each with oil.
- Place the baking sheet in the oven and bake for about 10-15 minutes, or until the cheese is melted and the tortillas are lightly golden and crispy.
- Remove from the oven and let them cool slightly. Cut each quesadilla into wedges using a pizza cutter or sharp knife.
