This banana french toast bake is another quick and easy recipe that cooks up in the microwave!
We are all about quick and easy breakfasts over here. I’m trying to find ones that only take only a couple minutes and cook in the microwave to really simplify mornings! This one was my son’s favorite of the few we’ve tried so far!
BABY LED WEANING
This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS
This recipe has eggs, dairy, and wheat. DF milk can sub in here, as can GF bread.
STORAGE
This is a small batch recipe. I stored the leftovers in the fridge for a few days, and reheated a square in the microwave for 30 seconds. After 4 days I would freeze.
SUBSTITUTES & ADD INS
Usually applesauce can sub in for banana. Roughly 1/2 cup of applesauce per 1 banana.
I haven’t tried to cook it in the oven, but I would do 350 and start checking for doneness at around the 15-20 minute mark.
TOOLS USED/RECOMMENDED
Souper Cubes Stoneware 5″ Square Baking Dish – this is what I used to cook the dish in. I do really like these! But any microwave safe dish will work just fine. You might need to adjust cooking times accordingly.

Banana French Toast Bake
Ingredients
- 1 ripe banana mashed
- 4 pieces bread cubed
- 1 tbsp milk
- dash of cinnamon
- 2 eggs
Instructions
- To a microwave safe dish add your banana and mash well
- Add in your eggs, milk, and cinnamon and mix well until well combined
- Cube your bread and add into the mixture
- Mix until all of the bread is coated
- Microwave for 3-4 minutes, cook time dependent on microwave, until french toast is set
- Let cool slightly, french toast will firm up as it cooks
- Slice and serve!
