Strawberry Banana Oat Cake

This super quick and easy strawberry banana oat cake is the perfect breakfast for busy mornings!

This recipe is a variation of my Microwave Oat Cake! Another super quick an easy one. Both are mixed directly in the baking dish and cook in the microwave, then you’re left with these soft and yummy oat bars. If your baby is all about strawberry banana, this one is for you.

My son loved this topped with yogurt! I added 1 tsp of honey because our bananas weren’t particularly ripe, but would omit if they were.

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS

This recipe has eggs and dairy. DF milk should sub in here just fine.

If you’d like to try it with an egg replacer, this one available online at Target. This post highlights other ideas for egg substitutes in recipes.

STORAGE

This makes a small batch, so I did not have any to freeze. I stored the leftovers in the fridge!

SUBSTITUTES & ADD INS

If your baby doesn’t like bananas or bananas don’t agree with them, I suggest trying my other variation, recipe found here.

TOOLS USED/RECOMMENDED

Souper Cubes Stoneware 5″ Square Baking Dish – this is what I used to cook the cake in. I do really like these! But any microwave safe dish will work just fine. You might need to adjust cooking times accordingly.

Strawberry Banana Oat Cake

A quick and easy breakfast perfect for babies or toddlers!

Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup mashed banana about 1/2 medium banana
  • 1/4 cup diced strawberries about 1 large strawberry
  • 1/4 cup milk any kind
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1 teaspoon honey or maple syrup optional, please omit honey if baby under 1

Instructions

  • In a microwave-safe bowl, mash your banana. Whisk in the egg, milk, and honey or maple syrup (if using). Mix to combine.
  • Mix in the oats and baking powder until combined.
  • Gently fold in the diced strawberries.
  • Microwave the mixture on high for about 3-4 minutes, or until the oat cake is set and cooked through. Cooking time can vary depending on your microwave, so check it after 2.5 minute and add additional time if needed.
  • Allow the oat cake to cool for a minute or two before serving. It will firm up slightly as it cools.
  • Top with extra sliced strawberries or a dollop of yogurt if desired.
  • Serve and enjoy!

    I tried it and it worked! My 15 month son who does not like oats loved it and it was great as a breakfast for his school
    I put apple instead of strawberry and it was amazing

      YAY!! I haven’t tried baking it but I think 350 and checking around 15-20 minutes and going from there would be a good place to start!
