If you have a little veggie hater, these banana spinach pancakes are a toddler tested and approved yummy breakfast to serve them!

The blender does the majority of the work for this one! You want to really blend the wet ingredients to get them as smooth as possible (no chunks of spinach!) Then add it to your dry ingredients and that’s it. Cook ’em up for a few minutes and you have breakfast ready to go for the next few days. Hope your little one approves!

Banana Spinach Pancakes
Ingredients
- 1 ripe banana
- 1 egg
- 1/2 cup ap flour
- 1/4 cup milk
- 1 small handful spinach
- 1/2 teaspoon baking powder
- Splash vanilla
- Pinch salt
- Butter or oil for greasing pan
Instructions
- Add banana, egg, milk, spinach, and vanilla to a blender and blend until smooth.
- To a mixing bowl add flour, salt, and baking powder and mix. Add in spinach banana mixture and stir until combined.
- Heat a pan over medium and lightly grease.
- Pour small pancakes (about 2 tablespoons each).
- Cook for 2–3 minutes until edges set then flip and cook another 1–2 minutes.
- Let cool slightly then serve!
