We love easy dinners around here, and this boursin broccoli pasta is exactly that. Most important, it’s toddler approved!

We make some variation of this Boursin pasta just about every week. It’s just so easy! The prep is so minimal between adding things to your baking dish and putting up water to boil. After that, almost no hands on time. I wanted to up the nutrition by adding broccoli and my toddler still ate it up!

Boursin Broccoli Pasta
Ingredients
- 8 ounces pasta of choice
- 2-3 cups broccoli florets cut small
- 1-1.5 cups cherry tomatoes
- 1 Boursin cheese wheel
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1-1.5 cups cooked chicken shredded or diced
- 1/4-1/2 cup reserved pasta water
- 1/2 cup grated parmesan cheese
Instructions
- Preheat the oven to 400°F.
- Bring a pot of salted water to a boil and cook the pasta according to package directions. Reserve about ¾ cup of pasta water before draining.
- While the pasta cooks, add the broccoli and cherry tomatoes to a baking dish. Drizzle with the olive oil and sprinkle with salt and pepper. Toss to coat.
- Place the Boursin cheese in the center of the dish.
- Bake for 20 to 25 minutes, until the broccoli is tender and the tomatoes have burst.
- Remove from the oven and mash the Boursin into the vegetables to create a creamy sauce.
- Add the cooked pasta, cooked chicken, and about 1/4 cup of the reserved pasta water. Toss until everything is evenly coated. Add more pasta water if needed to loosen the sauce.
- Stir in the parmesan cheese and serve warm.
