This broccoli cheddar waffle was the perfect quick lunch to get my toddler to happily eat his veggies!

Another day another waffle! These might be my personal fave, but I love the combo of broccoli and cheddar. My toddler happily ate these too, and any day he doesn’t reject broccoli is a good one! You do need to cut the broccoli pretty small, so I used kitchen scissors to do so.

Broccoli Cheddar Waffle
Ingredients
- 1 egg
- ⅓ cup finely chopped broccoli around 2 medium florets
- ⅓ cup shredded cheddar cheese
- 1½ tbsp flour
- Pinch salt
- Pinch garlic powder
Instructions
- Preheat waffle maker and spray well
- Mix everything together
- Split into 2 waffles
- Cook each for 3-4 minutes, until set and slightly crispy
