Meal prep breakfasts are key for my hangry toddler, and these sausage egg and cheese biscuit muffins were a hit for the whole family!

I love the classic combo of sausage, egg, and cheese, and this being easily eaten on the go is the cherry on top! Prep once and breakfast is ready for the next handful of days…depending on how fast you eat them 😉 enjoy! We stored in the fridge and air fried for a few minutes to warm up.

Sausage Egg and Cheese Biscuit Muffins
Ingredients
- 1 can Grands biscuits (not flakey layers!) 8 count, cut into 4 pieces each
- 4 large eggs
- 2 tbsp milk
- ½ lb breakfast sausage cooked
- ½ cup shredded cheddar cheese
- Salt + pepper
Instructions
- Preheat oven to 375°F and grease a muffin pan
- Cook sausage, breaking it into small crumbles. Drain excess grease
- Cut each biscuit into 4 pieces
- Add 3 biscuit pieces per muffin cup (use 10-11 cups total)
- Sprinkle sausage and cheese evenly into each
- Whisk eggs, milk, salt, and pepper in a bowl
- Pour egg mixture into each cup until about ¾ full
- Bake 22-25 minutes, until set and lightly golden
- Let cool 5–10 minutes before removing
