Cheesy Taco Rice Skillet

This cheesy taco rice skillet is a quick and easy dinner to make all in one dish!

Dinners have been a struggle over here so I am on a mission to figure out easy dinners that work for our entire family. This one was a HUGE hit! My son loved it, even as leftovers (which he is very particular about.) Such a quick and easy one to make with minimal mess, and so yummy.

ALLERGENS

This recipe has dairy. Feel free to use a DF cheese.

STORAGE

We ate this in a few days, but if we hadn’t I would have stored this for 4 days, then transferred to the freezer.

TOOLS USED/RECOMMENDED

Meat Spatula – such a great tool for breaking up ground meat into tiny pieces so it’s properly incorporated into the dish!

Braiser – you definitely don’t need this fancy of one, but it is an incredibly amazing piece of cookware!

Cheesy Taco Rice Skillet

A toddler approved easy dinner made in one skillet to minimize the mess!

Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning or about 2 tablespoons if homemade
  • 1 cup rice white or brown
  • 1 ½ cups chicken broth or water
  • 1 can 15 oz canned corn, drained
  • 1 can 15 oz canned black beans, drained and rinsed (unless flavored)
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  • Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Add the ground turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Season with taco seasoning, stirring to combine.
  • Stir in the rice. Add the chicken broth (or water) and bring the mixture to a simmer. Once simmering, reduce the heat to low, cover with a lid, and cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
  • Once the rice is cooked, stir in the drained corn, black beans, and salsa. Cook for an additional 3-5 minutes to heat everything through.
  • Sprinkle the shredded cheddar cheese over the top, cover, and let it melt for 2-3 minutes.
  • Serve warm and enjoy!
