Cheesy Taco Rice Skillet
Ingredients
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 packet taco seasoning or about 2 tablespoons if homemade
- 1 cup rice white or brown
- 1 ½ cups chicken broth or water
- 1 can 15 oz canned corn, drained
- 1 can 15 oz canned black beans, drained and rinsed (unless flavored)
- 1 cup salsa
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Add the ground turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Season with taco seasoning, stirring to combine.
- Stir in the rice. Add the chicken broth (or water) and bring the mixture to a simmer. Once simmering, reduce the heat to low, cover with a lid, and cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Once the rice is cooked, stir in the drained corn, black beans, and salsa. Cook for an additional 3-5 minutes to heat everything through.
- Sprinkle the shredded cheddar cheese over the top, cover, and let it melt for 2-3 minutes.
- Serve warm and enjoy!
