Chocolate Banana Oat Bars

These chocolate banana oat bars turned out SO delicious, and they’re super simple to make too!

I know, I got a little fancy with the chocolate drizzle. Don’t worry, if you don’t want to/have the patience to do that, you can totally mix the chocolate chips into the batter instead! They’ll be delicious either way 🙂

Chocolate Banana Oat Bars

A breakfast snack bar your toddler will be obsessed with!

Ingredients

  • 3 ripe bananas mashed
  • 2 eggs
  • 1/3 cup peanut butter
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla
  • 2 cups oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch salt
  • 1/3 cup chocolate chips
  • 1 tsp coconut oil or neutral oil

Instructions

  • Preheat oven to 350°F.
  • Line an 8×8 pan with parchment paper or lightly grease.
  • In a large bowl, mash bananas until smooth.
  • Add eggs, peanut butter, maple syrup, and vanilla. Mix well.
  • Add oats, flour, baking powder, and salt. Stir until combined.
  • Spread mixture evenly into pan and smooth the top.
  • Bake 20–25 minutes, until the center is set.
  • Allow bars to cool at least 20–30 minutes.
  • Place chocolate chips and coconut oil in a microwave safe bowl.
  • Microwave in 20–30 second intervals, stirring between, until smooth.
  • Drizzle chocolate over cooled bars using a spoon.
  • Put bars in the fridge until chocolate is set.
  • Once set, cut and enjoy!

I stored these in the fridge for 4 days, then transferred to the freezer.
