These chocolate banana oat bars turned out SO delicious, and they’re super simple to make too!

I know, I got a little fancy with the chocolate drizzle. Don’t worry, if you don’t want to/have the patience to do that, you can totally mix the chocolate chips into the batter instead! They’ll be delicious either way 🙂

Chocolate Banana Oat Bars
Ingredients
- 3 ripe bananas mashed
- 2 eggs
- 1/3 cup peanut butter
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla
- 2 cups oats
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- Pinch salt
- 1/3 cup chocolate chips
- 1 tsp coconut oil or neutral oil
Instructions
- Preheat oven to 350°F.
- Line an 8×8 pan with parchment paper or lightly grease.
- In a large bowl, mash bananas until smooth.
- Add eggs, peanut butter, maple syrup, and vanilla. Mix well.
- Add oats, flour, baking powder, and salt. Stir until combined.
- Spread mixture evenly into pan and smooth the top.
- Bake 20–25 minutes, until the center is set.
- Allow bars to cool at least 20–30 minutes.
- Place chocolate chips and coconut oil in a microwave safe bowl.
- Microwave in 20–30 second intervals, stirring between, until smooth.
- Drizzle chocolate over cooled bars using a spoon.
- Put bars in the fridge until chocolate is set.
- Once set, cut and enjoy!
I stored these in the fridge for 4 days, then transferred to the freezer.
