These chocolate crunch banana bars were an INSTANT hit with my son. Easy to make and absolutely delicious!

If you need a treat with some better-for-you ingredients, this is a great option! Base of oats gives you a fiber boost, and helps make it more filling. But the crunchy chocolate topping is obviously the best part 😉 I stored these on the counter for a few days, then they were finished!

Chocolate Crunch Banana Bars
Ingredients
- 1 mashed ripe banana
- 1 egg
- 3 tbsp peanut butter or sunflower butter
- 1/2 tsp vanilla extract
- 1.25 cup oats
- 1/2 cup chocolate chips
- 3/4 cup sprouted brown rice crisps
Instructions
- Preheat oven to 350°F and line a small 8×8 baking dish with parchment paper.
- In a bowl, mix together the mashed banana, egg, peanut butter, and vanilla until combined.
- Stir in the oats until a thick batter forms.
- Press mixture firmly into the prepared pan.
- Bake for 17–20 minutes, or until the center is set and springs back lightly when pressed.
- Let cool for about 5–10 minutes.
- Melt the chocolate chips until smooth, then stir in the sprouted brown rice crisps.
- Spread the chocolate crunch mixture over the bars and gently press down.
- Let the topping set in the refrigerator for 15 minutes before slicing.
