Pizza Biscuit Muffins

These pizza biscuit muffins only took 5 minutes to prep and then lunches were ready for the week for my toddler!

These turned out SO yummy, my toddler immediately ate 3! Such a quick one to whip up, and they last well in the fridge and when reheated. To reheat I’m air frying for a few minutes, just until warm. We hope you love them too!

Pizza Biscuit Muffins

Easy to prep lunch for your toddler!

Ingredients

  • 1 can Pillsbury Grands! Original Biscuits 8 count, cut into small pieces (I did into 9ths, but 4ths work too!)
  • 3/4 cup shredded mozzarella cheese
  • 1/3 cup mini pepperoni or chopped regular pepperoni
  • 3 tablespoons marinara sauce
  • 1 tablespoon olive oil
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 cup of parm to sprinkle on top
  • extra marinara for dipping

Instructions

  • Preheat oven to 375 and grease a regular muffin pan
  • Cut biscuits into small, even pieces
  • In a bowl, mix biscuit pieces with mozzarella, pepperoni, marinara, olive oil, egg, and seasoning until evenly coated
  • Scoop into muffin pan, filling about 3/4 full and gently press to hold together (don’t pack tightly)
  • Top with a parmesan
  • Bake 16 to 18 minutes, until golden on top and set in the center
  • Let cool slightly before removing so they hold together
