Let’s make some hidden veggie banana muffins so our toddlers will actually eat their vegetables 😂

I know I’m not the only one struggling to get their toddler to reliably eat veggies. Remember before you had a kid thinking oh I’d never hide their veggies in food I’ll just serve them as is and they get what they get. HA. Humbled. But that’s okay, because these muffins are packed with veggies and my son LOVED them!!
BABY LED WEANING
This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

Please note this recipe has honey, so omit if your little one is under 1 years old.
ALLERGENS
This recipe has eggs.
If you’d like to try it with an egg replacer, this one available online at Target. This post highlights other ideas for egg substitutes in recipes.
STORAGE
I stored these on the counter for 4 days, then transferred to the freezer. They can stay in the freezer for 2-3 months.
To freeze I would line a baking sheet with foil or parchment then lay in a single layer and place in the freezer. Once frozen (give it a few hours) you can transfer to another container. This way they are individually frozen rather than all stuck together in one huge block!
To reheat I would either thaw in the fridge overnight then toast or microwave, or just toast or microwave from frozen.
SUBSTITUTES & ADD INS
If you want to omit applesauce, you can add in an additional banana.
TOOLS USED/RECOMMENDED
Mini muffin tin – this is the one we have. I love it because you don’t need to use liners with it and it washes really easily!
Cookie scoop – I love using this to scoop meatballs, pancake batter, and tons more. I use this thing ALL the time when cooking for my son (and just in general)
Box grater – I use this often to grate apple, zucchini, cheese, and more!

Hidden Veggie Banana Muffins
Ingredients
- 1 medium zucchini grated (about 1 cup)
- 1 medium carrot grated (about 1/2 cup)
- 1 ripe banana mashed
- 1/2 cup unsweetened applesauce
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 egg
- 1/4 cup avocado oil melted butter, or oil of choice
- 1/4 cup honey optional, for sweetness. omit if child is under 1
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- Shred your carrot and zucchini finely and squeeze out as much moisture as you can! Super important step.
- In a large bowl, mash the banana, then add the applesauce, grated zucchini, grated carrot, egg, honey (if using), and oil (or butter). Stir everything together until well combined.
- Into the bowl add in the flour, baking powder, baking soda, cinnamon, and salt. Stir until just combined. Be careful not to overmix.
- Divide the batter evenly into the muffin tin (I did completely full, but you can do 2/3-completely full, just adjust baking times accordingly).
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
