These pizza muffins turned out so good! Nice and flavorful and and easy to mix up depending on baby’s favorites.

Isn’t this a fun one? I’ve been having fun creating more savory muffin recipes and I loved how these turned out. Flavorful from the Italian seasoning, and you can make them as topping heavy or light as baby prefers. Make for a hearty snack or a meal, depending on your little one’s appetite. I hope they love them!

Pro tip – don’t skimp on seasonings!! I really loved the Italian seasoning blend here.

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the muffins. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

For information on how to safely serve foods to babies depending on their age (plus so much more), I recommend Solid Starts. The app is free and has tons of information!

ALLERGENS

This recipe has eggs and dairy. You can easily swap in dairy free milk as well as dairy free cheese. It should work just fine with an egg replacer, this one available online at Target.

STORAGE

I stored these in the fridge for 4 days, then transferred to the freezer. They can stay in the freezer for 2-3 months.

To freeze I would line a baking sheet with foil or parchment then lay in a single layer and place in the freezer. Once frozen (give it a few hours) you can transfer to another container. This way they are individually frozen rather than all stuck together in one huge block!

To reheat I would either thaw in the fridge overnight then toast or microwave, or just toast or microwave from frozen. Best served warm!!

SUBSTITUTES & ADD INS

I haven’t tried yet with any subs or add ins, but let me know if you do! You could change up the cheese or the sauce, for example pesto as the sauce, or bbq with cheddar!

You could also add in any toppings baby likes.

Another option is to mix everything into the batter instead of layering on top. I think I’ll try that next time! Or mix everything in and top with just the sauce.

TOOLS USED/RECOMMENDED

Mini muffin tin – this is the one we have. I love it because you don’t need to use liners with it and it washes really easily!

Cookie scoop – I love using this to scoop meatballs, pancake batter, and tons more. I use this thing ALL the time when cooking for my son (and just in general)

Prep Time:10 minutes mins
Cook Time:12 minutes mins
Servings: 10

Ingredients

  • 1 cup all purpose flour
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 cp milk of choice
  • 1/4 cup avocado oil
  • 1/4 cup tomato sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped veggies optional

Instructions

  • Preheat your oven to 375 and either grease a mini muffin tin or line with paper liners
  • To a mixing bowl add your flour, baking powder, baking soda, all seasonings, egg, milk, and oil
  • Mix until just combined
  • To your mini muffin tin add batter until each well is around 3/4 full
  • On top of the batter add around a tsp of sauce and cheese as well as chopped veggies if you’re including those
  • Bake for 10-12 minutes until a toothpick comes out clean from the center
  • Let cool in the tin for 5 minutes
  • Serve and enjoy!

Yum! I think I need to make another batch of these asap and try just mixing it all together rather than layering. Let me know if you give these a try and what y’all think!

These are delicious!! I have been struggling to get food into my baby. Swapped the chopped veggies for pureed veggies and halted the milk quantity to not let it be too moist! They perfect

If I want to use a regular muffin tin instead of mini, what would the cooking time be like?
