These quinoa mini muffins were a big win of a recipe and I’m so excited to share it with y’all. I actually was going to post a different recipe today, but couldn’t wait on this one!

This is a super easy to put together great base muffin recipe for your little one. High protein and fiber than regular muffins thanks to the quinoa, sugar free, moist, and yummy. My son has been a much harsher critic lately (hello toddler vibes coming to play!) but he loved these. I’m sure your little one will too!

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the muffins. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS

This recipe contains flour, egg, and milk. You could easily replace the milk with whatever milk you choose!

I made an egg free version HERE – but essentially all I did was replace the egg with an egg replacement. Worked like a charm!

STORAGE

I am storing these on the counter in an air-tight container for 4 days, then will freeze. To reheat from frozen I will either microwave for a minute or put in the toaster oven for 5 minutes until warm. You also could thaw overnight then warm for less time.

SUBSTITUTES & ADD INS

Mashed banana should sub in great for the applesauce, or a mixture of banana and applesauce. I plan to try out adding a few things in and seeing how it goes, will report back!

I will say that when I first tested the recipe I added in 1 cup of chopped strawberries and it didn’t work. Flavor was great, but it was too wet and muffins fell apart. Perhaps a regular muffin would work? Or just less strawberries. Still need to test. If I were to add fruit in, I would add less and perhaps just some pieces on top.

Quinoa Mini Muffins

Super simple muffin recipe for your little one that is higher in protein and fiber than regular muffins!

Prep Time:5 minutes mins
Cook Time:30 minutes mins
Servings: 24 muffins

Ingredients

  • 1 cup cooked and cooled quinoa
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup unsweetened applesauce
  • 1/4 cup milk I used 2%, but use whatever you have
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 egg

Instructions

  • Preheat the oven to 350 and grease a mini muffin tin
  • Get a large bowl and add all of your ingredients
  • Mix until everything is combined
  • Add batter to muffin tin, each one should be a little less than full
  • Bake for 10-15 minutes, until a toothpick comes out clean
  • Cool in muffin tin for 5 minutes, then transfer to a wire rack to cool completely
  • Serve and enjoy!
