Baby Led Weaning Recipe: Spinach Banana Muffins

These baby led weaning inspired spinach banana muffins for my son were a hit! Spinach and banana are the main ingredients, making them tasty and healthy for your little one. Plus, they freeze and reheat like a dream.

Spinach Banana Muffins

This recipe was a big hit with my son when he was 6 months! I really wanted to find a way to have something quick and easy at the ready, that was jam packed with nutrients. This has spinach and is made with baby oatmeal, so it has lots of iron! Plus some protein from the eggs. All in all, a healthy and delicious recipe to add to your rotation. Plus, it takes all of 5 mins to throw together, and then you bake it. Boom, done!

I froze them all afterwards and would microwave 2-3 at a time for around 30 seconds until thawed/warm but not too hot. They’re on the mushy side, which worked super well for him at 6 months. I think I might try again with flour next time, since he can handle more texture/less mushy things.

Spinach Banana Muffins

Spinach Banana Muffins for Baby

An easy recipe safe for 6 months and up. Spinach and baby oatmeal provides tons of iron. Sugar free and freeze well!

Equipment

  • 1 Mini muffin tray
  • 1 Blender

Ingredients

  • 2 Ripe bananas
  • 2 Eggs
  • 1 cup Baby oatmeal
  • 1 tsp Baking powder
  • 1 Handful of spinach
  • 1/3 cup Water (this was just to get everything blended, you could try less!)

Instructions

  • Throw everything into the blender and blend until smooth-ish (Mine wasn't perfectly smooth and it turned out just fine!)
  • Bake at 350 for 35 minutes until muffins are slightly brown around the edges and pulling away from the edges slightly.
  • I froze mine and would reheat by microwaving 2-3 for 30 seconds until warm.
