Microwave Oat Cake

This microwave oat cake only takes a handful of ingredients, cooks up in the microwave, and tasted so delicious!

My goal with recipes is always quick, easy, and healthy(ish) and this definitely checked all the boxes. You mix it right in the dish and cook it in the microwave. Protein, fiber, all naturally sweetened. Checks all the boxes! Super easy to to customize too!

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS

This recipe has eggs and dairy. The dairy comes from milk and can easily be replaced with a dairy free alternative.

If you’d like to try it with an egg replacer, this one available online at Target. This post highlights other ideas for egg substitutes in recipes.

STORAGE

This makes a small batch, so we didn’t have a ton of leftovers. This made 2 portions, so the second portion I stored in the same container I cooked it in, in the fridge.

SUBSTITUTES & ADD INS

You can add in a little sweetener either to the batter or on top after it’s cooked. I think it would have been a bit better with a tsp of honey (if your baby is over 1). You also can add in berries, bananas, or other fruit your little one likes. Shredded carrots and zucchini would like work in the batter as well.

TOOLS USED/RECOMMENDED

Souper Cubes Stoneware 5″ Square Baking Dish – this is what I used to cook the cake in. I do really like these! But any microwave safe dish will work just fine. You might need to adjust cooking times accordingly.

Microwave Oat Cake

A quick, simple, and healthy breakfast cake for little ones

Servings: 2

Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk
  • 1 egg
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 1-2 tsp sweetener of choice, like honey or maple syrup (optional)

Instructions

  • In a microwave-safe bowl or dish, whisk together all of the ingredients. Mix until well combined. Stir in any optional add-ins if using.
  • Microwave on high for about 2-4 minutes. Check the oat cake after 2 minutes and add additional time if needed.
  • Allow the oat cake to cool for a minute or two before serving. It will firm up slightly as it cools.
  • Top with fresh fruit, a dollop of yogurt, or a sprinkle of cinnamon if desired!
  • Serve and enjoy!

      I think 350 degrees for 15-20 should work!

    This is SUCH a hit in our household.
    For sweetener, sometimes I just use an overripe banana. I top with yogurt and some hemp heart and my daughter LOVES it thank you!
