One Pot Cheeseburger Pasta

A toddler approved dinner for the whole family!

Ingredients

  • 1 lb 450g ground beef (can use ground turkey or chicken)
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup 240ml beef or chicken broth
  • 1 can 14.5 oz/411g diced tomatoes, undrained
  • 1 cup 240ml milk (whole or 2%)
  • 2.25 cups 224g uncooked pasta (elbow, shells, or any short pasta)
  • 1 cup 115g shredded cheddar cheese
  • 1/2 cup 60g shredded mozzarella cheese
  • 2 tbsp ketchup
  • 1 tbsp mustard optional, but adds that classic cheeseburger flavor
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter
  • chopped pickles optional, for topping once cooked

Instructions

  • In a large pot or deep skillet, heat the olive oil or butter over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
  • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  • Add the ground beef, breaking it up with a spoon as it cooks. Cook until the beef is browned and fully cooked through. Drain any excess fat.
  • Stir in the ketchup, mustard (if using), broth, milk, and diced tomatoes with their juice. Bring the mixture to a boil.
  • Once boiling, add the uncooked pasta. Reduce the heat to a simmer and cover the pot. Cook for 10-12 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the liquid.
  • Once the pasta is cooked, stir in the shredded cheddar and mozzarella cheese until melted and the dish is creamy. Season with salt and pepper to taste.
  • Serve the cheeseburger pasta warm, topped with your choice of optional toppings like diced pickles, parsley, or extra cheese.
