One Pot Cheeseburger Pasta

This one pot cheeseburger pasta was a great dinner for the whole family, and most importantly, toddler approved!

My son usually has something different than me and my husband for breakfast and lunch since it’s at a different time than when we eat, but we try to do the same thing for dinner! This was a great one for the whole family, and my son loved it. Came together fast and didn’t require a ton of time cooking at the stove either. Hope you love it!

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS

This recipe has dairy from the milk and cheese. I believe df replacements could work here, although sometimes df cheeses don’t always melt the same.

STORAGE

I stored the leftovers in the fridge for a day or two, and then we had finished it! If we have some to freeze I would have in a Souper Cube container and kept in the freezer for 2-3 months.

To reheat I would either thaw in the fridge overnight then microwave, or just microwave from frozen.

One Pot Cheeseburger Pasta

A toddler approved dinner for the whole family!

Ingredients

  • 1 lb 450g ground beef (can use ground turkey or chicken)
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup 240ml beef or chicken broth
  • 1 can 14.5 oz/411g diced tomatoes, undrained
  • 1 cup 240ml milk (whole or 2%)
  • 2.25 cups 224g uncooked pasta (elbow, shells, or any short pasta)
  • 1 cup 115g shredded cheddar cheese
  • 1/2 cup 60g shredded mozzarella cheese
  • 2 tbsp ketchup
  • 1 tbsp mustard optional, but adds that classic cheeseburger flavor
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter
  • chopped pickles optional, for topping once cooked

Instructions

  • In a large pot or deep skillet, heat the olive oil or butter over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
  • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  • Add the ground beef, breaking it up with a spoon as it cooks. Cook until the beef is browned and fully cooked through. Drain any excess fat.
  • Stir in the ketchup, mustard (if using), broth, milk, and diced tomatoes with their juice. Bring the mixture to a boil.
  • Once boiling, add the uncooked pasta. Reduce the heat to a simmer and cover the pot. Cook for 10-12 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the liquid.
  • Once the pasta is cooked, stir in the shredded cheddar and mozzarella cheese until melted and the dish is creamy. Season with salt and pepper to taste.
  • Serve the cheeseburger pasta warm, topped with your choice of optional toppings like diced pickles, parsley, or extra cheese.
