Potato Pizzas

A fun little snack or meal with all the yummy flavors of pizza

Ingredients

  • 2 large Russet potatoes
  • 1-2 tablespoons olive oil
  • 1/2 cup pizza sauce or marinara sauce
  • 1 cup shredded mozzarella cheese
  • Your choice of toppings pepperoni, sliced olives, diced bell peppers, mushrooms, etc.
  • 1 tsp Italian seasoning or dried oregano
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash the potatoes thoroughly and slice them into 1/4-inch thick rounds.
  • Place the potato slices on a baking sheet lined with parchment paper.
  • Brush both sides of each potato slice with olive oil and season with salt and pepper.
  • Bake the potato slices in the preheated oven for 20-30 minutes, flipping them halfway through, until they are tender and slightly golden.
  • Remove the potato slices from the oven and spread a small amount of pizza sauce on each slice.
  • Sprinkle shredded mozzarella cheese over the sauce.
  • Add your favorite toppings on top of the cheese.
  • Return the potato pizzas to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Let the potato pizzas cool slightly before serving.
  • Serve and enjoy!
