The zucchini tots are a fun and delicious way to serve veggies to your little one! Plus, their shape makes it easy to hold for early baby led weaning months.

These were super simple to prepare and work great to stash in your freezer for a quick veggie side when you’re in a pinch. Only take a few minutes to prep then you bake up and done!
BABY LED WEANING
This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the muffins. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS
This recipe has wheat, egg, and cheese. Gf breadcrumbs should work fine here. You could use a vegan cheese.
It should work just find with an egg replacer, this one available online at Target.
STORAGE
Store these in the fridge in an air-tight container for 4 days, then freeze. To reheat from frozen you can microwave or use the toaster oven (preferred)

Zucchini Tots
Ingredients
- 2 medium zucchini shredded
- 1 cup breadcrumbs
- 1/2 cup shredded or grated parmesan cheese
- 2 eggs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
Instructions
- Preheat your oven to 400°F.
- Line a baking sheet with parchment paper and lightly grease it with cooking spray or oil.
- Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to prevent soggy tots!!
- In a large bowl, combine the drained zucchini, breadcrumbs, grated Parmesan, egg, and seasonings. Mix everything together until well combined.
- Take small amounts (1.5-2tbsp) of the mixture and shape them into small tots or nuggets, or use a cookie scoop. Feel free to skip shaping them, I did! Place each tot on the prepared baking sheet, making sure they don't touch each other.
- Bake in the preheated oven for 20-25 minutes, or until the tots are golden brown and crispy. If you’d like, you can flip the tots halfway through making to get them crispy on both sides but ngl I didn’t do that lol
- Serve and enjoy!
