Pumpkin Banana French Toast Bake

This pumpkin banana french toast bake has the yummy flavors of fall for a quick and easy breakfast!

Another quick and easy breakfast (or any time) idea! This one includes the yummy fall flavors from the pumpkin + pumpkin pie spice. It’s soft and so delicious!

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS

This recipe has eggs, dairy, and wheat. DF milk can sub in here, as can GF bread.

If you’d like to try it with an egg replacer, this one available online at Target. This post highlights other ideas for egg substitutes in recipes.

STORAGE

This is a small batch recipe. I stored the leftovers in the fridge for a few days, and reheated a square in the microwave for 30 seconds. After 4 days I would freeze.

To reheat I would either thaw in the fridge overnight then toast or microwave, or just toast or microwave from frozen.

TOOLS USED/RECOMMENDED

Souper Cubes Stoneware 5″ Square Baking Dish – this is what I used to cook the dish in. Any microwave safe dish will work just fine. You might need to adjust cooking times accordingly.

Pumpkin Banana French Toast Bake

A quick and easy breakfast with the flavors of fall.

Servings: 4

Ingredients

  • 3 slices whole wheat bread or any bread of your choice
  • 1/2 ripe banana mashed
  • 2 tablespoons canned pumpkin puree not pumpkin pie filling
  • 1 egg
  • 1/4 teaspoon pumpkin pie spice or cinnamon
  • 2 tbsp milk

Instructions

  • In your microwave safe dish, combine the mashed banana, pumpkin puree, egg, pumpkin pie spice or cinnamon, and milk. Mix until well combined.
  • Cube up your bread and add it into the mixture making sure each pieces is coated.
  • Microwave on high for about 3-4 minutes, or until the egg is cooked through. Check to make sure it’s firm and set.
  • Let it cool slightly. Cut and serve!

    I don’t have a microwave but I would love to make this for my kiddos, at what temperature and how long it will take to make it in the oven?

      Hi! I haven’t tried yet but I would do 350 and start checking around 15 minutes!

    What can be used instead of milk for babies below 1

      Babies below 1 can have milk when it’s cooked into foods 🙂 But you can always sub in non-dairy milk, formula, or breastmilk if you’re more comfortable with that!
