This pumpkin banana french toast bake has the yummy flavors of fall for a quick and easy breakfast!
Another quick and easy breakfast (or any time) idea! This one includes the yummy fall flavors from the pumpkin + pumpkin pie spice. It’s soft and so delicious!
BABY LED WEANING
This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the recipe. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS
This recipe has eggs, dairy, and wheat. DF milk can sub in here, as can GF bread.

STORAGE
This is a small batch recipe. I stored the leftovers in the fridge for a few days, and reheated a square in the microwave for 30 seconds. After 4 days I would freeze.
To reheat I would either thaw in the fridge overnight then toast or microwave, or just toast or microwave from frozen.
TOOLS USED/RECOMMENDED
Souper Cubes Stoneware 5″ Square Baking Dish – this is what I used to cook the dish in. Any microwave safe dish will work just fine. You might need to adjust cooking times accordingly.

Pumpkin Banana French Toast Bake
Ingredients
- 3 slices whole wheat bread or any bread of your choice
- 1/2 ripe banana mashed
- 2 tablespoons canned pumpkin puree not pumpkin pie filling
- 1 egg
- 1/4 teaspoon pumpkin pie spice or cinnamon
- 2 tbsp milk
Instructions
- In your microwave safe dish, combine the mashed banana, pumpkin puree, egg, pumpkin pie spice or cinnamon, and milk. Mix until well combined.
- Cube up your bread and add it into the mixture making sure each pieces is coated.
- Microwave on high for about 3-4 minutes, or until the egg is cooked through. Check to make sure it’s firm and set.
- Let it cool slightly. Cut and serve!
