If my son could talk, I think he would say that these banana blueberry french toast cups are one of his favorite recipes of mine. He’d def want your baby to try them too!

This was a win of a recipe. When we first started baby led weaning, I went with Ezekiel bread to serve him, as it’s pretty nutrient dense. He liked it for a bit, then decided it wasn’t for him (which tbh I get, I don’t love it either.) But, we were left with most of a loaf sitting in our freezer. I’m always trying new ways to get him to eat eggs, so decided to make a big batch of these blueberry banana french toast cups as a way to use up the loaf, and luckily they were a hit!
Super simple, and perfect for meal prepping ahead of time.
BABY LED WEANING
This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the french toast cups. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. What’s recommended most often is pieces that are two finger width apart, so I would probably quarter and serve that way. That said, you might want to look into it further just to triple check it’s the safest way to serve a muffin to your baby.
Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS
This recipe contains egg and dairy, as well as whatever allergens are in the bread you’re choosing
I plan to test these with an actual egg replacement, and will update here when I do. If you’d like to try, here’s one that has good reviews and is available online.
The dairy can easily be replaced with a dairy-free milk of your choice.
STORAGE
I would store these in the fridge for 4 days max, then transfer to the freezer.
To reheat I microwave one at a time for a minute then crumble until cool (or you would quarter depending on baby’s age.)
SUBSTITUTES & ADD INS
Lots of way to mix these up! If your little one doesn’t love banana, you could sub in applesauce (probably around a cup). You could take out the blueberries and add in any fruit they like! You also can use any bread.
TOOLS USED/RECOMMENDED
