These lemon garlic chicken thighs were a recipe I found on Instagram that turned out to be a huge hit for the whole family. Easily baby led weaning friendly!

I will definitely update this picture soon because I know we’ll be making this again (and again). It was SO good, so easy, and worked for the entire family. I’m really trying to find easy dinners that work for everyone, and this was a hit.
It’s also a one pan meal so minimal cleanup 🙌
I found it on Instagram by the creator @whatsonashlysplate and altered it only slightly to make it more friendly for baby.
Be sure to serve with something to soak in those juices! Rice or potatoes would work well. We had some focaccia from the farmer’s market that day so we used that. We served with veggies as well, a salad for mom and dad, and steamed broccoli for my son.

STORAGE
We barely had leftovers lol but I’d store in the fridge for 3-4 days then transfer to the freezer if we did.
SUBSTITUTES & ADD INS
You could season this anyway you’d like! You also could marinate for longer if you’d like, I’m sure that would make it even more delicious.
You could use any cut of chicken you’d like, just adjust the cooking times accordingly.
TOOLS USED/RECOMMENDED
Baking dish with raised sides that is broiler safe (if you plan to broil, but you can skip that step)
Meat thermometer – I will never cook meat without using one! We have a expensive one because my husband cooks meat all the time, but this one is affordable and looks great. I like that it has printed on their the safe temperatures for meat so you never need to look it up!

Lemon Garlic Chicken Thighs
Ingredients
- 1.5-2 lbs boneless skinless chicken thighs we use one small package, ours was 7ish thighs
- 1/3 cup olive oil
- 1 lemon
- 3 garlic cloves minced
- 1 tsp lemon pepper
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Preheat the oven to 400 degrees
- To your baking dish add olive oil, juice and zest of your lemon, minced garlic, and seasonings and give a good mix
- Add your chicken thighs and mix around until each one is coated
- Bake for 35-40 minutes until cooked through
- Broil for 5 minutes (optional)
- Serve and enjoy!
