These make ahead blueberry baked oats are the perfect breakfast for busy mornings!

More quick meal prep coming your way! Works great for a grab and go breakfast for mom, dad, or toddler. We’ve been storing these in the freezer and microwaving for easy breakfasts. So delish!

Blueberry Baked Oats
Ingredients
- 3 cups old-fashioned rolled oats
- 1 cup full-fat cottage cheese
- 4 large eggs
- 1 cup milk
- 1/4 cup honey (or 1/3 if you want it sweeter)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp baking powder
- ¼ tsp salt
- 1½ cups frozen blueberries
Instructions
- Preheat oven to 350°F. Grease a 9×13 baking dish.
- Blend the cottage cheese until smooth.
- In a large bowl, whisk together the blended cottage cheese, eggs, milk, honey, and vanilla.
- Stir in the oats, cinnamon, and baking powder.
- Gently fold in the frozen blueberries.
- Pour into the prepared baking dish.
- Bake for 35–40 minutes, or until the center is set and lightly golden.
- Cool completely before cutting into 12 squares.
- Freeze the squares in a single layer, then transfer to a freezer bag.
