Broccoli and Potato Waffles

These broccoli and potato waffles are a fun way to serve veggies to your little one!

Yum! These were a hit with my son, but to be fair, he’s a huge fan of broccoli. Just plain steamed broccoli. I wonder how long that will last…

Anyways, this was a fun way to mix up serving broccoli to him. A made a bunch and froze them for quick veggie sides. Also, something I’ve read about picky eating is to continue to serve and expose your little one. It can take a ton of exposures for them to warm up and feel ready to try! Perhaps plain steamed isn’t for them, but as a waffle with some cheese for flavor would be more interesting.

BABY LED WEANING

This would be a great recipe to serve babies starting at 6 months, once they’ve been safely introduced to the allergens in the waffles. For younger babies, typically it’s best to serve bigger pieces since those are easier for them to hold. Strips would work well here. Once they develop the pincer grasp (pointer and thumb pinching together), then you can start to give them smaller pieces.

ALLERGENS

This recipe contains egg and cheese

I haven’t tried without egg, but plan to. If you’d like to try, here’s one that has good reviews and is available online.

I believe a vegan cheese should work here.

STORAGE

I would store these in the fridge for 4 days max, then transferred to the freezer. Freeze in a single layer, I typically will place on a baking sheet with parchment paper, and once frozen transfer to another container or ziplock bag. If you freeze altogether it’s impossible to separate, this makes it easy.

To reheat I put in the toaster oven until warm, but you could also do the microwave. I think they turn out better when reheated in the toaster oven personally!

SUBSTITUTES & ADD INS

I think zucchini would work well here too, just shred and squeeze out excess moisture. Any cheese will work here too.

You also could do less broccoli here, these are definitely broccoli forward 🙂

Next time I plan to double the cheese!

TOOLS USED/RECOMMENDED

Mixing bowl

Waffle iron – I use this mini one

Tongs – I use these all the time, and find they work well to remove the waffles from the iron. That said, a fork or other utensil will work just fine, too!

Steamer/Pasta Pot – We use this all the time. Has a steamer and pasta insert. This isn’t the exact one we have, but probably should switch to it because it’s stainless steel.

Masher – I like this one because it doesn’t get stuck in the drawer!

Broccoli and Potato Waffles

A fun way to serve broccoli to your little one!

Servings: 8

Ingredients

  • 2 cups broccoli
  • 1 large russet potato
  • 1/2 cup cheese of choice
  • 2 eggs
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder

Instructions

  • Cut broccoli into pieces (doesn't really matter size but keep the same) and steam until soft
  • Peel and cube potato and boil until soft
  • Preheat your waffle iron
  • Add broccoli and potato to a bowl and mash together, cool for a few minutes
  • Add in remaining ingredients and mix until combined
  • Add 1/3 cup of mixture to a greased waffle iron (we use avocado oil) and close
  • Cook for 5-8 minutes until browned and crispy
  • Remove, and cook remaining batter
  • Serve and enjoy!
